Like others said, great smoker and use the Virtual Weber Bullet site. Once you have the smoker started check the built in thermometer against another reliable thermometer. My built in thermometer was 75 degrees too low and there is no way to calibrate so you either have to do the math or replace the thermometer like I did.

I have two problems with my newly purchased WSM.
1. The water pan is too deep vertically, almost eight inches deep. When it's in place over the charcoal it dips down and you can't see and therefore service the charcoal on the back side. It would have been so easy for them to creat a water pan with a flat bottom, as on the 22.5 WSM. I'm surprised that according to Weber service I'm the first to complain about this. If you've thoughts, let me know.
2. This is a fundamental problem I have with most charcoal bullet smokers that rely on the water pan to sustain a temp. of 250F, or whatever you wish for low temperature smoking. I think an awful lot of charcoall is burned and basically wasted heating water to the simmer to maintain the temp.
3. There are no handles on the smoker body. If you have to lift the body out to add charcoal for a very long smoke it's difficult. That would be helped greatly with handles attached to the sides of the body.
If I had it to do again I'd strongly consider purchasing either an offset smoker, or a gas smoker. My wife won't allow the offset in our patio.

My smoker arrived very quickly and in excellent condition. I have used it 10 times for a variety of different meats. Set up was straightforward and the instructions were clear. I purchased this after reading tons of reviews online and couldn't be more pleased. Couple of things: the weber chimney starter is a good addition to help get the charcoal going quickly. Usually one full chimney is enough to smoke just about any meat. If you are doing brisket or Boston butt, I would recommend adding another chimney of unlit coal before you put the hot stuff on (the minion method). Also, I recommend putting aluminum foil on the bottom of the water bowl. This will help with clean up. Often I will fill the water bowl with apple juice and water. This unit seems to get better after every smoke. I try to stay on the top rack for most of the cooking unless I have a lot of meat to smoke. The thermometer is fairly accurate, but I would recommend a good probe thermometer like the Polder Dual Probe to give you an accurate internal temp reading. The WSM holds the temp very well and will make you the most sought after backyard chef in your neighborhood. It comes with a nice grill cover, so you don't have to worry about ordering one (a nice plus). I have smoked meat in below freezing weather and the only thing that really affects the cooking performance is wind. If you are smoking on a really windy day, then I would recommend constructing some sort of wind break to help keep the temps stable. I would buy this thing again and again. If it ever wears out, then I am buying another one!

I did a lot of homework before purchasing this product. My biggest fear was that I would regret purchasing the 18 instead of the 22. That has not happened. The two racks in the 18 are more than adequate for my needs. I was able to smoke a 12 lb turkey for Thanksgiving and have one rack entirely unused. I could have fit a significantly larger bird. I had been seriously considering the Big Green Egg as well. The reason I went with the Weber was not just expense. The BGE is big, heavy, and well made. The Weber is small, light and well made. I already own a Weber gas grill which is over 10 years old and still performing perfectly. The BGE duplicates a number of the functions of my gas Weber, so when it got down to, I really didn't need to spend the extra cash on the egg. The benefit of the egg over the Weber is it is hyper insulated by comparison, which means I would use less charcoal. Charcoal simply isn't that expensive. There was one other thing that I found disturbing about the BGE, and that was it's tendency to perform something called a "flashover". If you google "Big Green Egg flashover" you can see videos of it happening. It is a flash of fire that results when you open the egg and air rushes in. I could just see my son lifting the lid on the egg and having flames rush out into his face. That was a risk I was not willing to take. I've made a number of meals on the Weber Smokey Mountain, and all have turned out well. The website [...] is a wonderful resource. In short, my WSM works well, can be moved easily, is durable, easy to use, has a great user community and has great capacity for someone who entertains occasionally, but primarily cooks for family. I am quite happy with my purchase.
